Collar Bacon is the ribeye, cut from the loin eye muscle in the shoulder area. Just like the succulent beef ribeye cut, pork ribeye has fine curves of intra-muscular fat which flavours and lubricates the meat as it is cooked. An increasingly popular cut from yesteryear. Like all Fruit Pig bacons, our pork ribeye is slow cured and then cold smoked.
